The Assamese cuisine is the regional cuisine of Assam. Khorikaa presents a mixture of different indigenous style with considerable regional variations and with some external influences coming with a twist of modernisation. Khorikaa is characterized by the mixture of race and tribal communities but keeping in mind both its culture and taste. A traditional meal in Assam begins with a khar, a premium dish named after the main ingredient and ends with a tenga, a sour dish. Khar (খাৰ) is an old aged main dish of the Assamese culture, mainly prepared by ashes of a banana stem which is then filtered out. Tenga( টেঙা) in terms means ‘sour’, which in assamese culture is a high expected dish, popularly the ‘maasor-tenga jul’( মাছৰ টেঙা জোল ). It is primarily prepared by fish which is cooked either with Elephant-Apple(ঔটেঙা) or Fermented Bamboo shoots( খৰিচা). Both the dishes popularize as a traditional meal in Assam. The Assamese cuisine is distinguished by its distinct flavour of Exotic herbs, the smell of Bamboo shoot and the sweet smell of Joha rice.( জহা চাউল).
Khorikaa standardizes the authentic taste of these cuisine with their consistent and efficient serving to the market. Khorikaa in terms means ‘skewers’. Here in ‘Khorikaa’ we serve in the old traditional method of roasting on a skewer, hence the name.
